Recipes The Perfect Fall Chili Recipes

What could be better than coming home after a long cold day at work and smelling that delicious chili prepared and ready to eat in the crockpot. There are not a lot of meals that can warm you up on a cold fall Michigan day like Chili. The best part about Chili is that it requires cheap ingredients, and it’s easy to make. After you try these two recipes, you won’t be chilly willy any more!

Everyone loves a White Chicken Chili recipe!

Here is what you will need:

1 lb of chicken breasts

1 yellow onion or onion of your choice

2 garlic cloves

24 oz chicken broth

2 x 15oz cans of Northern beans drained & rinsed

1 or 2 4 oz cans of green chiles (it depends on how hot you like your food)

1 x 15oz can of corn drained & rinsed

1 package of cream cheese (you can leave this out if lactose intolerant)

¼ cup of half & half or coconut milk (if lactose intolerant)

½ tsp chili powder

¼ tsp cayenne pepper

1 tsp cumin

¾ tsp oregano

Small handful of cilantro

Salt & pepper to your liking

Optional Toppings:

Shredded cheese

Tortilla chips or strips

Jalapenos

Avocados

Sour cream

Cilantro

In a crockpot, dump all the ingredients except for the cream cheese and half & half. Cover the crock pot and cook those ingredients for 4 hours on low. After those 4 hours shred the chicken and add the cream cheese and half & half in the crock pot. Then cook for another 15 minutes on high. Stir all the ingredients together and whala! You have a delicious, creamy, mouthwatering white chicken chili to warm up your whole family and guests! Why guests, because this chili is THAT good neighbors will be knocking on your door!

Now for a twist on the Classic Chili recipe that will taste even more like fall!

This is what you will need:

2 lbs of ground beef

1 x 15 oz black beans

1 x 15 oz white beans

1 x 15 oz can of pumpkin

3 cups of beef broth

1 x can Rotel tomatoes

1 x 4 oz green chiles

1 chili seasoning packet

2 tablespoons of pumpkin pie spice

2 tablespoon of brown sugar

1 teaspoon cumin

Salt & pepper to your liking

Optional toppings & sides:

Shredded Cheddar Cheese

Sour Cream

Avocado

Bacon

Tater Tots

Corn Bread

Homemade bread

Cook and drain the meat in a skillet. Then place meat and all the other ingredients in a stock pot, simmer for 1 hour and stir occasionally. Add toppings and on a cold day, your favorite dish  just got pumpkin kissed! Eat up!
