Oh the cravings for summer desserts are real right now, am I right? Key Lime Pie! Strawberry Shortcake! Ice Cream Treats! As summer creeps closer and closer to our reality, it’s time to start thinking about easy, delicious, desserts to serve over the weekends. Now we realize that easy peasy desserts only mean something if they taste scrumptious. That is why we can assure you these three recipes will not leave you or your taste buds disappointed. In fact, it will have your family screaming for MORE (ice cream) after they try one bite. So, what are we waiting for? Let’s stick a fork or spoon in them…

Greek Yogurt Key Lime Pie

Ingredients:

  • 3 containers of key lime pie flavored greek yogurt.
  • 1 container of cool whip
  • 1 graham cracker crust

Instructions:

#1. Mix together the greek yogurt and cool whip.

#2. Spread into the crust.

#3. Cover your pie and freeze for at least 2 hours.

#4. Remove pie at least 15 minutes before serving.

#5. Eat up with a smile on your face, why because it’s that easy and yummy!

Layered Strawberry Shortcake

Ingredients:

  • 8 x 8 Pan (Brownie Pan)
  • 2 x containers of cool whip (About room temperature)
  • 2 x boxes of vanilla wafer cookies
  • 2 x containers of strawberries
  • 2 x tablespoon of sugar

Instructions:

#1. Slice the strawberries (not into fourths but long slices) and sprinkle them with sugar.

#2. The bottom ~ Place a little bit of cool whip on the bottom, then add the cookies.

***Make sure to set aside some strawberries and wafer cookies for the topping.

#3. The Layering ~ Cool Whip, strawberries, then wafer cookies in that order till all you have left is a layer of cool whip on top.

#4. Now place the set aside strawberries in a pleasant pattern and crumble the remaining wafer cookies all over the top.

#5. Place in the refrigerator for at least 2 hours.

#6. Serve and enjoy ~ Heyyy shortyyy, it’s delicious right?!?

Ice Cream Sandwich Cake

Ingredients:

  • 10 ice cream sandwiches
  • 1 box of your favorite ice cream flavor (softened)
  • 1 container of cool whip (soften when ready to use)
  • Chocolate & caramel sauce
  • 1 bag of mini M&M’s or chocolate chips

Instructions:

#1. Line a pan you want the shape of your cake to be with plastic wrap.

#2. Layer 1 ~ Ice cream sandwiches (you may have to cut them to fit)

#3. Layer 2 ~ Ice cream, spread it all over the top of the ice cream sandwiches.

#4. Layer 3 ~ Now repeat till you no longer have any ingredients left.

#5. Now freeze for at least 2 hours.

#6. After 2 hours remove the ice cream cake from the pan using the plastic wrap and set on a plate.

#7. The toppings ~ frost the cake with a softened cool whip, drizzle the chocolate and caramel sauces on top, sprinkle with mini M&M’s or chocolate chips or what the heck both, and serve!

#8. This is a delicious dessert, but it’s also a great cake to help celebrate summer birthdays!
